Crunchy Costa Rica Salad

Bambú Clinic costa rice recipe

1 ½ cups shredded cabbage

¼ cup diced cucumber

1 ripe mango, peeled and diced

1 red bell pepper, diced

6 green onions, thinly sliced

1 avocado, peeled, pitted and cubed

2 handfuls watercress, stemmed

juice of 2 limes

1 garlic clove, crushed

3 TB olive oil

salt and pepper to taste

Combine all ingredients and chill for at least 30 minutes before serving.
